In my journey, I have saved a lot of emissions, pollutants (plastic, toxic waste), and money which I could invest in other ways in life (health insurance, charities, and saving towards a property of my dreams).<br />

Unfortunately, I have one BIG BIG BIG weakness which I have not been able to fully control and that is my dearest readers.....drum rolls......Handbags!<br />

Yes, I know, it is not very conscious of me and I have stopped buying them almost all together sourcing only pre-owned items but I have always dreamt about a personalized handbag which I felt so guilty to even consider to own one, but I have come to the conclusion, that we can not seek perfection in life and as long as we keep pushing ourself, educating ourself and making an effort to be better, we still can allow ourself to keep our passions (at a regulated rate).<br />

I would like to introduce my gorgeous new vegan and cruelty-free canvas cotton tote with my personalised initials! I had it personalised from both sides. different design (in order to have 2 different styles but only using one bag to save materials and natural resources) and I have taken it on all of my essential errands during the lockdown and can not wait to start to use it more often after the World will resume into a more normal state or a new normal state.<br />

I wanted to share this with you as we can sometimes be too hard on ourself and when it is good to push ourselves and try to always be better today than yesterday we can still fulfill our dreams and passions. If we think a little outside the box there can even be some ideas on how to , have our cake and eat it,. In my case, I decided to pick a bag which I knew I would REALLY use and benefit from (I use cotton tote bags but wanted a larger bag so I could fit in more items, one with a zipped compartment to keep my valuables and one with a large zip to keep all the items safe and for them not to be able to fall out).<br />

This 1 bowl peanut butter recipe is just so easy (perfect activity to do with children or when bored or expecting last minutes guests), just under 30 min from start to finish and is, of course, cruelty-free and vegan as well. To me, these cookies are the perfect marriage with a nice (warm or cold) glass of plant-based milk or <a href="https://www.ecoislogical.com/2020/02/the-ultimate-and-simple-vegan-hot.html">with my ultimate hot chocolate drink</a> as an afternoon pick me up and oh, boy, have I needed those lately.<br />
If you feel extra fancy you can add some chocolate bits to the batter or decorate the cookies with melted chocolate and sprinkle with some crushed peanuts or sea salt a swell.<br />
They taste great crumbled over a nice-cream, too! :)<br />

<u><b>Ingredients:</b></u> (about 20 cookies)<br />
<br />
<b>1 cup</b> of 100% <b>peanut butter </b><br />
<b>1 cup</b> of your preferred <b>sugar</b><br />
<b>1 cup</b> of <b>flour</b> (I use a simple white organic one or oat flour, both work very well)<br />
<b>1/3 </b>of a<b> cup</b> of your preferred <b>plant-based milk </b>(might need 1-2 tablespoons extra with some flours)<br />
<b>2 teaspoons</b> of <b>vanilla</b> <b>sugar</b> or vanilla extract (I prefer the sugar version)<br />
<b>1 teaspoon of baking soda</b> (or baking powder)<br />

<b><u>Instructions: </u></b><br />

Preheat your oven for 175 decrease Celsius.<br />

In a bowl, add your peanut butter, sugar, salt, and vanilla and beat with a hand mixer for about 1-2 minutes.<br />

Add your sieved flour and baking soda, plant-based milk and combine with a spatula (you can use your hand as well, but then you would need to leave to cool your dough in the fridge for about 30 min as your hands would warm the dough up too much and the cookies would not retain their shape as well while baking).<br />
<br />
Prepare your baking tray and line it with a silicone baking mat or baking paper.<br />
<br />
With a tablespoon, scoop out your dough into about 20 pieces. Quickly make each piece to a ball-shaped piece and flatten down the cookie with a fork (you may dip the fork in sugar or water for it to prevent sticking to the dough).<br />
Place on the baking tray.<br />

I have to admit that I have often been lazy an tried to skip this part and try to find easier ways to get a pizza sauce from using just crushed tomatoes, flavoured passata, leftover pasta sauce, and even ketchup (yes, I know, the horror), but after may fails I cam to the realization that even if this step seems easy to cut corners with, one really just cheats themself.<br />
Instead, I now use this easy pasta sauce, which I make in a batch and freeze in small upcycled glass jars (for example from mustard, from tomato passata or vegan pesto, also, make sure you leave few centimeters of air under the lid), that tends to be the perfect amount to defrost (overnight in the fridge or on the defrost setting in the microwave) in conjunction with the: <a href="https://www.ecoislogical.com/2020/04/the-best-no-rise-easy-10-min-vegan.html">Delicious & Easy 10 min Pizza Dough Recipe</a>. This marinara sauce will take about 30 minutes to make.<br />
<br />
<u><b>Ingredients:</b></u><br />
<br />
400 g (a can) of tinned tomatoes (your favourite tasting brand)<br />
1/2 of a grated small/medium onion<br />
1 tablespoon of olive oil<br />
2 medium-sized minced garlic cloves<br />
1 teaspoon of sugar<br />
3/4 of a teaspoon of dried basil<br />
1/2 a teaspoon of dried oregano<br />
1/2 a teaspoon of salt<br />

<b><u>Steps: </u></b><br />
<br />
Prepare a pot (one which does not tend to burn too easily) and heat it up one medium heat. When heated up add the olive oil and the grated onions and fry for about 2 minutes. Add your herbs and minced garlic and stir fry for an additional 2 minutes (make sure the garlic does not catch or burn).<br />
<br />
Add your canned tomatoes, salt, and sugar and crush the tomato bits evenly so there are no large lumps (you can blend them as well in the end if you wish but I prefer the sauce to have the texture).<br />
<br />
Let it simmer for about 25 minutes on a lower heat.<br />

Taste and season accordingly if you wish any flavour to have a more prominent taste.<br />

Dress your pizza dough (or let it cool down and store it in the fridge or freezer).<br />

This blog is all about how to live a more sustainable, eco-friendly, frugal and fulfilling life and with us (non-essential workers) we have been told to stay at home as much as possible and to minimize our trips to the shops to the minimum. It is a time also to realize the huge value of all the food staples we normally take for granted and us that still have access to the food we like and can afford it, we really need to be truly thankful for it.<br />
The recipe I will share with you is for a super easy and super quick pizza dough, which is fully vegan and can easily be made organic, too. I will not recommend any toppings as this recipe is to make it with all your older ingredients in the fridge, the sad and the forgotten ones which would otherwise most probably go to waste.<br />

If you have children, this would make a much fun activity and no need to wait for the dough to rise with this recipe (I believe the rising part is often the part why people skip baking).<br />

<b>6 dl flour </b>(about 2.5 cups)<br />

<b>1/2 dl olive oil </b>(about 3.2 tablespoons)<br />
<b>2 teaspoons baking powder</b><br />
<b>1/2 teaspoon of salt</b><br />

Preheat your oven for 225-250 degrees celsius and place the baking tray in to heat up as well.<br />

In a bowl, sieve your flour into it, baking powder and salt.<br />
Add water and oil and work into a nice not too sticky dough.<br />

Divide your dough into 2-4 pieces (2 large pizzas or 4 smaller pizzas).<br />
Dust some flour on your working top and roll our pizzas with your hands or with the use of a roller pin.<br />
<br />
Spread your tomato sauce on the pizza (leave the edges bare) and cover with all your desired toppings.<br />
Top with (vegan) cheese on top for a delicious and indulgent snack or skip the (vegan) cheese for a healthier version.<br />
<br />
Bake in the lower part of the oven for about 7-10 minutes or when the pizza is to your liking.<br />

In the latest months or years, most of the public has been educated about the accelerating destruction of our world based on unsustainable farming methods, pesticides to promote the growth of all the animal feed which is destroying and polluting the deep underground water systems, the incomprehensible cruelty caused to all the animals suffering.<br />
We think we might have it harder while being quarantined at home? Think about being locked inside a tiny little dark cold cell, lying on hard wet concrete with never being able to see sunlight or even take a few steps or turn around (that is the terrible lives of many pigs around the world, and yes, in the US and Europe, too). Baby male chicks being hacked to death while still alive just because they were born with the wrong gender, male calves torn apart from their mothers only to be slaughtered while still babies, their mothers raped and having their children stolen on and on again until their bodies brake and they are slaughtered at a very early age (dairy cows are often slaughtered at the age of 4 as their body can not take the huge stress they are under their whole life even when their natural life span is about 20 years).<br />

After hearing all this information many of us would like to change our behavior and adopt a more environmentally friendly, healthier, cheaper, cruelty-free diet and lifestyles but often ask yourself the question of how is it possible to achieve?<br />

Can a vegan diet be healthy? How do I make sure I get all my essential nutrients, vitamins, proteins or calories? How can I track my macros? Will I go hungry on a vegan diet? Will I lack protein on a vegan diet? Is a vegan diet expensive? How to stay healthy on a vegan diet? Will I loose weight on a vegan diet? Is a vegan diet unhealthy? Is a vegan diet sustainable?<br />

These and many more questions are often asked by many people who are considering a more cruelty-free, eco-friendly lifestyle as so many celebrities and role models have adopted a vegan or plant-based lifestyle and they have never looked better.<br />

I know of vegans who are reaching for just 50g (depends a lot also on your current weight) of proteins and are still satisfied. However, the higher protein content ensures that I am staying satisfied for longer as that helps me to stay away from mindless snacking. </i></span><br />

The chronometer app has helped me in a large way of understanding my own eating habits. I had no idea how much ,junk, I was indulging myself in without even realizing it. I am still allowing myself to eat treats and unhealthy foods but now I am more aware of them and actually even enjoy them more than I used to before I as am fully aware of them and know that it is a treat, not a nutritional necessity.<br />
The cronometer app has proven to be an amazing motivational tool as I am more motivated to eat better for my body and health.<br />
Also, the app has thought me a lot about different types of protein (have you ever heard of Lysine, Threonine or Valine), or have you ever tracked you Phosphorus in your minerals or your Pyridoxine (B6) in your vitamins? This app focuses on all this and more.<br />

Every day we are bombarded with thousands and thousands of adverts (in US people are exposed to about 4000 - 10 000 adverts a day). Some we are aware of and some come more concealed (from influencers to sponsored articles in a news page, fun internet videos to branding on your everyday objects). Lately, as we as the general public are growing more environmentally aware we are also starting to get adverts which promotes a more eco-friendly lifestyle. Some are good (like re-washable face wipes and naturals sponges) and some are simply just wrong and are actually a wolf in a sheep coat (bad companies which just make their branding more green in colour and natural-looking, abusing the word <u>degradable</u> or sells unnecessary items with printed slogans), that is called <u>greenwashing</u> and is targetting unsuspecting consumers.<br />
<br />
In reality, the most environmentally and eco-friendly items are the ones you do not buy but already have.<br />
<br />
This brings us to today's post and recipe. We produce quite a bit of scrap even if we are trying to be conscious and to cruelty-free and to eat plant-based. We know that throwing it in the general waste bin is not recommended as it decomposes much slower and releases far too much methane trough the process, sometimes the food does not break down at all but mummifies instead. Also, we are loosing out on all the natural and nutritious fertilizers which could be created in composts if we took care of our waste properly.<br />
I have grown up using a compost but was told that cooked food does not belong onto a compost. After looking into it a bit it seems to be a half-truth. Yes, cooked meals do not really belong on composts but it is mainly because they most often contain meat, butter, oils, which do not belong there but cooked / steamed/baked vegetables are most welcomed to join the compost heap.<br />

I have been collecting all my vegetable scraps which would normally be discarded and I have been freezing them in a container in my freezer (the scraps most often consist of onion ends and skins (this creates a wonderful colour of the stock), carrots (adds sweetness), garlic (flavour), parsnip (flavour), shallot (colour and flavour), and any vegetables which somehow went past their best as I did not utilize them on time like mushrooms, herbs, (I try to minimize this of course as much as possible).<br />

<u>Instructions: </u><br />

When I have collected a larger amount I place it in a <b>large pot</b> and fill with <b>cold water</b> and add some <b>spices</b> I have at home (that is why it is called a penny stock as it cost only pennies in items you need to use) like <b>salt, peppercorns, bay leaves, allspice.</b><br />
Options to add for extra flavour if desired (I do not do it often myself): <b>seaweed, shiitake mushrooms, turmeric, herbs, celery, coriander seeds or ginger (</b>for a more oriental taste).<br />
<br />
Let is simmer for around 2 hours (no less than an hour, if you are strapped on time us a pressure cooker).<br />
<br />
Sieve your broth.<br />
<br />
Let your broth cool down and separate into containers to make it practical to use.<br />
<br />
<u>TIPs: </u><br />
1. This broth is great as the base for soups and sauces. Personally, I use it mostly as a base for mushroom soups and sauces or tomato soups and sauces, lentil stews or as a garlic noodle broth or miso soup.<br />
<br />
2. You can reduce your stock even more into small little flavour bombs you can freeze in an ice tray mold and have for cooking.<br />
<br />
3. Freezes extremely well.<br />

I have been on a hunt for a non-toxic nail varnish solution for some time. I have been reading articles about how harmful the nail polish can be on the body, to articles about the waste created from nail polish removers and pads and how they are even considered as a health and nature hazard in some countries, to how there is microplastic in many of the polishes and that glitter nail polish is so harmful to the environment and that I simply just strive towards a more eco-friendly and sustainable lifestyle yet trying to keep as many ,perks, from the olden non-conscious days, today, I can happily say, that I have found a wonderful solution and I wonder why this item has not become more popular and mainstream (well, maybe I do understand as this way you save a lot of money and do not need to repurchase anything which I suppose companies do not like).<br />
<br />
To be honest, I have been using nail polish in the past even when in the back of my head something was telling me that it is not really the most environmentally friendly solution, but I was still reassuring myself that I will only use up the amount I currently own and that I will not repurchase any more.<br />
However, the more I was thinking about it the more uncomfortable I became.<br />
Luckily I ran out of my nail polish remover few months ago and took it as an opportunity to not repurchase anything before I would read into the topic more and, oh, what an eye-opening time that was.<br />
After that, I decided not to be using any nail polish and try to find a better solution which I was not able to find.<br />
Certain nail polish brands said that they are non-toxic but they were still packaged in a way I could not see it being later repurposed or successfully recycled and also all the toxicity from the nail polish remover and pads to remove the polish with (yes, I know, this blog post is bursting in the word polish ;) ) I continued my search.<br />
Later, I stumbled upon different coloured henna, which was claimed, that it could colour your nails as well (I particularly liked the pink colour) but the finish looked very matt and dull as well as it was not packaged sustainable eighter so I never purchased it as I did not feel I would be truly satisfied with it.<br />

I almost gave up on my search (which took some weeks and my short, brittle nails became strong and the longest they have ever been in their natural state ((they could grow longer in the past only if I had gel manicure over)) which surprised me as I thought I was always very gentle with my nails while manicuring them and it acted as additional proof to me that nail polish could really not be healthy no matter what from what angle one was looking at it.<br />

The best way (as far as I have discovered) is to have it at a 180-degree angle with the nail and to buff lightly. When you feel the file is full of nail dust just tap it a few times on a piece of fabric (your clothes for example) or cloth. The dust will fall off and you can continue. After use, you can run it under a tap of water so it is fully clean or sanitize it if you are suffering from some sort of infection or sharing the item with others.<br />
Results last for about a week for a nice impact but it makes a difference even longer. However, it is super easy and fast to top up on the shine again. Works marvelously as a nail file to shorten and adjust your nail shape and size, too.<br />

This has become one of my favourite swaps so far of 2020 and I already gave away mine to my best friend when she saw the result and I had to re-purchase an additional for my self after that. Now we are both rocking beautiful, shiny, non-toxic, eco-friendly and sustainable nails.<br />

<b><u>Basic steps on how to protect yourself and others: </u></b><br />
<b><br /></b><b>Do not shake hands or kiss while greeting people</b> as that is a way the virus can spread from person to person so easily. Not even the Royal Family shakes hands with people anymore (or they wear gloves) and Donald Trump supposedly has people sanitize his hands every time he touches or shakes hands with somebody (even when he tries to portray a different front-but I might be mistaken here of course but it seems to be accurate as he is a self-proclaimed germofobe).<br />
<br />
<b>Wash your hands</b> - based on the recommendations one should wash their hands for a minimum time 20 seconds. This should involve scrubbing all the areas of your hands properly and washing it off thoroughly.<br />
<br />
<b>Cough into a tissue</b> (which you dispose of) <b>or into your elbow</b>. Do not cough into your hand as the hand will most likely continue to spread the viruses around.<br />
<br />
<b>Cut your nails </b>short as if you are contaminated with the virus it is extremely hard to properly clean the area under your nails.<br />
<br />
<b>Use gloves</b> when you go out into high traffic areas to protect yourself - especially if you have no option of washing your hands when out and about. Hand sanitizers (with alcohol content over 60% should work well but it seems to be sold out in most places). It might sound quite extreme but it would really help in my opinion to prevent the large peak and minimizing overcrowding/overcapacity issues in hospitals.<br />
<br />
<b>Do not touch your</b> eyes, mouth, ears, nose or <b>face</b> (I have found that wearing gloves helps this as one stops themself from touching the face with gloves subconsciously to first remove the gloves, which gives time to remember, that we should stop. If you touch your face, then wash your hands immediately. Also, this means, that you should not lick your fingers while eating.<br />
<br />
<b>Sleep</b> <b>more</b> as good sleep is important. Your body recovers the best during your deep sleep and keeps your immunity in better state, too.<br />

The cold weather is still sticking around and so is my desire for a hot chocolate drink after a long hard day.<br />
In some aspects of life, it can be a little challenging to transit to a more cruelty-free and vegan lifestyle but when it comes to sweets and desserts I feel like there are just no obstacles and I have even started to experiment with more flavours.<br />
This is how this most wonderful hot chocolate came to life it is a homage to my south American genes but also to my Scandinavian roots. This vegan drink is to me simple perfection.<br />
<br />
Ingredients: for 2<br />
<br />
2 cups of hazelnut milk (or any plant-based milk you prefer)<br />
3 tablespoons of cocoa powder or 90 grams of vegan 70% chocolate<br />
4 teaspoons of sugar (I use vanilla infused)<br />
1/2 teaspoon of cinnamon (but 2 stalks of cinnamon)<br />
1/4 teaspoon of cloves (grounded or whole)<br />
1/4 teaspoon of ginger (powder or fresh)<br />
1/6 teaspoon of allspice (grounded or whole)<br />
1/2 cup of water<br />

pinch of salt<br />

Place all items (apart from the milk) into a pot and let it simmer on medium heat (3 minutes if your spices are grounded or 6 minutes if your spices are whole). Do not let to boil but keep hot.<br />
<br />
Add your milk and continue to stir on the heat (do not let it boil) for an additional 2 minutes.<br />
Sieve through a tight sieve (ideally a cloth or a nut milk sieve) so the drink is as smooth as possible.<br />
<br />
Serve in your favourite mug.<br />
Sprinkle with a little cinnamon/cinnamon stick or add your favourite vegan whipped cream.<br />

I am not sure who came up with a plant-based milk alternative, but in my opinion, it is rivaling the invention of sliced bread. And that we can all find our favourite based on your dietary requirements and tastes is absolutely wonderful!<br />

There as simply so many types of plant-based milk one can choose from like oat milk, hazelnut milk, almond milk, rice milk, soy milk, coconut milk, mixed nut milk, pea milk, peanut milk, hemp milk, cashew milk, the list seems to be endless, which gives so much variety and options.<br />
<br />
Also, it has many benefits from, like it being cruelty-free, lactose-free, environmentally and eco-friendly and does not include the negatives of cow milk which are: often contains antibiotics, puss, artery-clogging saturated fat, hormones and is a cruelty-filled business (where female cows get raped by humans and their newborn calves are stolen, male calves are killed soon after for their ,veal meat, and female calves are having a hard short life). It is already 2020 and we do not need to support these types of massive, cruelty-filled businesses. Cow milk is breast milk. It belongs to their babies, just as human breast milk belongs to human babies.<br />

<b>WHICH PLANT-BASED MILK IS MOST SUSTAINABLE, ENVIRONMENTAL AND ECO-FRIENDLY?</b><br />
<br />
When reading into this topic there where many factors considered, from deforestation, water use, pesticides use, transport, methane, storage of carbon and re-forestation.<br />
Based on the information I was able to find, any swap from cow milk to plant-based milk is a good ethical and environmental swap. Personally, to me, the ones that stood out the most were organic <b>oats</b> and <b>nut-based</b> milk which are the best options one can choose in my personal opinion. Organic oats are crops that are easy to grow and do not contribute to deforestation nor pollution of nature with pesticides. Nut-based milk could replace croplands and promote re-planting trees, carbon is stored in the trees as well, they produce oxygen, help to protect us from erosion and flooding, and also not as many pesticides are needed compared to other crops.<br />
<br />
<b><u>PLANT-BASED OAT MILK RECIPE: </u></b><br />
<b><u><br /></u></b>
Oat milk is a wonderful plant-based milk option, as it is gentle on the environment, affordable (even in the organic version which I recommend if you can afford it), you do not need a top of the range blender which is often the case with nut milk and is one of the easiest plant-based milk recipes to make and simply, oh, so yummy.<br />
<br />
<u>Ingredients:</u><br />
<br />
1 cup of rolled <b>oats</b> (your favourite kind as taste plays a role in the finished product)<br />
4 cups of drinking <b>water</b><br />
pinch of <b>salt</b><br />
<br />
Optional: 1-2 dates for sweetness (or 1-2 teaspoons of syrup or sugar), vanilla extract,<br />
cocoa, cinnamon<br />
<br />
<u>Directions: </u><br />
<br />
Place all your ingredients in your blender and blend for about 30 seconds if your oats are more soft or 45-if your oats are more hard and thick (as over blending can make your oat milk a little ,slimy, tasting).<br />
<br />
Taste if you like the taste and amend amounts and ingredients to suit your preferences.<br />
<br />
Now sieve it through a very fine mesh, coffee cafetiere or cloth (not with a too high thread count or it will take ages).<br />
I use my 30p recyclable mesh bag from Sainsbury (it is sold as a reusable bag for your fruits and vegetables) or trough an old cloth (like a t-shirt) or a coffee cafetiere, depending on what you have at home. An old t-shirt works the best in my opinion. Double or triple strain for best results.<br />
<br />
Transfer into your container and refrigerate.<br />

Plant-based milk can separate, I recommend double or triple straining them for best results, shaking them before each use or adding lecithin or xanthan gum (0.4% of the volume) to combat it.<br />
<br />
It holds well up to 5 days in the fridge providing you store it air-tight with a lid. You can freeze it as well, just remember that it expands, so never fully fill your freezer bottles.<br />
<br />
The leftover pulp can be mixed into your breakfast oats, crumble, granola or kept frozen for when needed.<br />
<br />
Nowadays I store my oat-milk in upcycled pickle jars as they are the easiest to clean and easy to stack.<br />
<br />
This milk is low in calories and is only about 19 calories per half a cup.<br />
<br />
If possible, try to purchase your oats organic from a bulk-free shop or packaged in a recycled paper bag. But if that is not an option, then plastic packaged oats is much better from the ethical and environmental point as well, of course. :)<br />

100 g vegan<b> chocolate bar</b><br />
150 - 200 g of vegan <b>chocolate</b> <b>chips</b> (of your choice)<br />
1 tablespoon of <b>vanilla sugar</b> (or 1 spoon of normal sugar + 1 teaspoon of vanilla extract)<br />
1 tablespoon of <b>instant coffee</b> (or very strong coffee)<br />
1 teaspoon <b>baking powder </b><br />
1/2 teaspoon <b>salt</b><br />

<u>Steps:</u><br />
<br />
Pre-heat your oven for 175 degrees C.<br />
<br />
To make your vegan buttermilk. Add your lemon juice into your plant-based milk and leave it for a while to curdle.<br />
<br />
Melt your butter in the microwave or in a pot. When melted, take off the heat and break your vegan chocolate bar into it to melt as well.<br />
<br />
In a bowl. Sift your flour, cocoa powder, baking powder and add your sugar salt and coffee as well.<br />
Add your curdled vegan buttermilk, melted butter with your melted chocolate and vanilla sugar (or extract). Stir well. Add chocolate chips (leave some to decorate on top as well if you wish).<br />
<br />
Grease a medium tray with any fat (I use vegan butter) and dust with a little sugar. Pour in your brownie batter and bake in the oven for about 30-45 minutes (depending on your oven and how soft you want them, I bake them generally for 40 minutes if the oven is consistent). Check the consistency of the bake with a steel or bamboo skewer.<br />

When done, cover with a clean dish cloth and leave it to cool down.<br />

A topic I have often debated and thought about. What type of seafood (prawns, fish, clams, oysters, mussels) are the most sustainable and eco-friendly ones? Should I leave them off my food completely? Are there any sustainable methods in the sea-food industry? These and many more questions I have been asking myself in the latest time and has been even more fueled after my discovery of bottom trawling (dredgers), my view on the sustainability and health of our oceans and seas has never been the same. I can not grasp how such cruelty and destruction must happen before the greedy wakes up from their spell as currently, it feels we might truly soon be hitting a point of no return. The extended forest fires in (Russia, Brazil, Bolivia, Indonesia, and Australia), the high temperatures of Antarctica (over 20 C), the bleaching of the corals due to warmer seas and accelerating rate of extinction of species faster than they can evolve (with estimated extinction rates up to 45 000 times their natural speed) and so on...<br />

I have been on a quest for an easy delicious pancake (the European version AKA crepes for the Americans) recipe with some ups and many downs. Unfortunately, I have to say that pancakes made with banana or chia seeds are unfortunately not to my taste and some recipes asked for so many ingredients that I needed to purchase that it did not feel right. Pancakes should be simple and delicious. Simple as that. I hope you enjoy them as much as I do and also, HAPPY INTERNATIONAL PANCAKES DAY to you all!<b> </b>You deserve it!<br />
<br />
<u>Ingredients:</u> 5-6 pancakes<br />
<br />
60 grams of <b>flour</b> (1/2 a cup)<br />
315 ml or your favorite <b>plant-based milk</b> (3/4 of a cup)<br />
2 tablespoons of <b>oil</b> (with no strong flavour)<br />
pinch of <b>salt</b><br />
40 ml of <b>water</b> (still or carbonated)<br />
<br />
optional:<br />
<br />
1/2 teaspoon of <b>vanilla flavouring </b><br />
1 tablespoon of <b>maple syrup or sugar</b> (or any sweetener of your choice)<br />
1/2 teaspoon of <b>cinnamon</b> (for any cinnamon lover as I am)<br />
<br />
<u>Steps:</u><br />
<br />
<b>1.</b> In a bowl, add sifted flour and all other ingredients apart from the water and stir well until all combines.<br />
<br />
<b>2.</b> Cover with a plate and let sit in the fridge for 1 hour.<br />
<br />
<b>3.</b> After the hour, prepare your pan/s on which you want to make them on. I prefer to use 2 (medium-sized) pans to cut time. Pre-heat them on medium heat for at least 5 minutes (this will ensure that your first pancake will be good and not fall apart as the reason they do so is that the pan has not been heated up properly).<br />
<br />
<b>4.</b> Check your batter and see if it is the right consistency (you might need to add the water now or later depending on the consistency).<br />
<br />
<b>5.</b> Add oil or vegan butter to the pans to prevent sticking (make sure you spread it on the whole pan ((you can use a cooking brush for it)) and that the oil does not burn). Add about regular 1/2 - 3/4 of a soup spoon server (soup ladle) and start from the middle of the pan and spread in a circular motion towards the edges. Then swirl your pan around in your hand for the batter to cover the whole pan in a thin and even coating. Cook on each side (a little longer on the other side) until the pancake is done.<br />
Place on a plate and cover with another plate to keep them warm and moist. Repeat until you have made all your pancakes.<br />

<u>My favourite toppings:</u> vanilla sugar & cinnamon, strawberries, and vegan vanilla ice cream or vegan, palm-free hazelnut spread topped with nuts with banana or vegan ice cream.<br />
Savory pancakes are great, too! I just never seem to remember it when I make them :D<br />
<br />
<b>TIP</b>: As most of my favourtie recipes these pancakes freeze well, too. I recommend filling them already with your desired filling and folding them or rolling them up before freezing. That way you can defrost them and enjoy them immediately.<br />

It is said that Americans are exposed to over 4000 - 10 000 of advertisements every day. That is an enormous number and many of these advertisements go unnoticed to us and are processed in our subconscious mind which in the end is confusing us and making us less likely to make the right desition for ourselves.<br />

I am an advocate that less is more and that excess in materialistic items does not lead to more happiness as most often it leads to the opposite in my opinion. Unfortunately, I feel like it is not the quality of the product which is the strongest selling point but the amount the PR team invested in their campaign (for example when it comes to perfume, you are really mainly paying for the marketing campaigns and not for the ingredients in the product as they are very cheap). Also, planned obsolescence in a horrendous thing and I am so happy the EU is finally somewhat battling against it in the upcoming year of 2021 (manufacturers will be obligated to provide spare parts for their products and have them readily available for 7 to 10 years depending on the product, also they will have to be built in a way that the repair will be possible to do with common tools).<br />

However, the most eco-friendly way will almost always be to cherish the items you already have and if needed to purchase new ones that you will have a look in the pre-loved market or choosing high-quality items sourced ideally from natural, renewable and cruelty-free materials.<br />

A sweet classic that never grows old. That to me is the classic Swedish cinnamon bun.<br />
Normally, I would say that one should not temper with perfection and just be grateful and enjoy it but that is until I tried the cinnamon and cardamon version. Oh, boy am I grateful and oh, boy am I thankful that we live in an era when it is so simple to create the most wonderful vegan recipes as well. To everyone who has been vegan in the past and paved the way for us, I am eternally thankful.<br />
<br />
These buns pairs perfectly with: <a href="https://www.ecoislogical.com/2020/02/the-ultimate-and-simple-vegan-hot.html">The Ultimate Vegan Hot Chocolate drink recipe</a> for the most perfect Fika:).<br />
<br />
For this soul-warming recipe, you will need: (makes 8-12 buns depending on the size you want)<br />
<br />
DOUGH:<br />
60g vegan butter (organic vegan naturli block)<br />
175 ml of warm plant-based milk (creamy homemade plant-based milk)<br />
1 sachet yeast<br />
265 grams of all-purpose flour<br />
50 grams of sugar<br />
1 teaspoon of cinnamon<br />
1/2 vanilla pod<br />
pinch of salt<br />
<br />
FILLING:<br />
100 grams of vegan butter (organic vegan naturli block)<br />
85 grams of sugar<br />
2 teaspoon of grounded cinnamon<br />
2 teaspoon of grounded cardamon<br />
pinch of salt<br />
<br />
GLAZING:<br />
30 ml water<br />
25 grams sugar<br />
1/2 vanilla pod<br />
<br />
TOPPING:<br />
5 teaspoons of plant-based milk<br />
pearl sugar for decoration (or any other sugar or sugar sprinkles ((make sure they are vegan)) ).<br />
<br />
<br />
1. DOUGH: In a pot, melt your butter on a low-medium heat and add your milk and 1 tablespoon sugar. Stir and turn off the heat (the liquid should be warm as for a baby bath (( about 37-38 C)),<br />
you can test with your finger it should be warm but not too hot). When you are happy with the temperature and add your yeast. Let it sit for 5 min.<br />
<br />
2. Prepare your mixer with a dough hook (you can make it in hand as well but you will need to, work the dough, with your hands for about 8 minutes). Combine your flour, sugar, cinnamon, salt, your activated yeast mixture, and the remaining warm milk. Set your mixer on low speed (or combine all gently with your hands). If the dough is too dry add a little milk and if too tacky then add a little flour until satisfied. Mix on medium speed for about 4 minutes until a nice smooth and elastic dough forms (this might take longer if done by hand). The dough should feel voluptuous to touch when ready.<br />
<br />
3. Transfer your dough into a lightly oiled bowl and cover with a clean cotton kitchen towel. Leave to rise for 1 hour in a warm place (I place it in the oven for 40 C to raise).<br />
Prepare 2 baking trays and silicone mat on it (or baking paper) to prevent sticking and burning.<br />
<br />
4. FILLING: Add all filling ingredients in a small pot or bowl and soften up on medium heat or in a microwave so all ingredients blend together.<br />
<br />
5. Place your dough on clean space dusted with flour (make sure it does not stick to the surface) and roll it out into a rectangle (about 25x40 cm). Cover in the filling (make sure it is evenly spread all over the surface).<br />
<br />
6. Now, pick up the edges of the longer side of your dough and fold over. Be gentle and try not to amend the shape too much and slice into 8-12 even strips. Shape the buns and place on your trays (maximum 6 buns per tray as they expand as they bake).<br />
<br />
7. Cover your buns under a cotton kitchen towel and let to rise for about an hour. Meanwhile,<br />
pre-heat your oven for 220 C.<br />
<br />
8. GLAZING: In a small pot, heat your water and add the sugar and vanilla bean seeds and stir well. When it starts to boil, set aside.<br />
<br />
9. When your buns have risen, brush your buns with plant-based milk (this will give the buns a beautiful colour when baked). Bake in the lower third of the oven (so they do not burn on the top), one tray at the time in a total of 12 minutes (rotate at 6 minutes) for each tray. As soon as they come out of the oven, brush them with your glazing and sprinkle them with your pearl sugar (or normal sugar or any sprinkles if you do not have it).<br />
Repeat with your second tray.<br />

TIP: These freeze extremely well (just make sure you store them in an airtight container to prevent freezer burn or altered taste from the freezer). Freeze after cooled down and defrost overnight in your kitchen or within few seconds in the microwave.<br />

TIP: If you are making these for a large party or to batch cook for the freezer you can double or triple the ingredients easily.<br />

Many of us can see the snowball effect of climate change and the injustice between all species.<br />
Many of us want to do the best but it can be proving difficult to make changes for the whole family as not everyone is yet on board to change.<br />
<br />
Also, even if not mentioned here, try to stop paying for single-use products (especially plastics) as you simply just pay money for it and throw in the bin so soon after. That is literally just throwing away your money and destroying the Earth and your future (money and eco-wise) in the process of it. Which really does not sound so wise or smart.<br />
<br />
I have collected a few easy (and money smart) ideas which should make most the people happy to switch and all should be as painless as possible to accomplish. All ideas should really provide you with a higher quality of life.<br />
<br />

1) While using your dishwasher, select a more toxic-free dishwasher tablet, cut it in half and use half a tablet at each time (you save money, stay away from toxic brands and pollute less of your water system).<br />
TIP: only scrape off your plates, do not rinse them.<br />
TIP2: this tip also works with hand soap. Split it in half to make it last longer.<br />
<br />
2) Switch to a green energy provider (It has never been easier to switch your contracts as so many websites make it very seamless - switching to a green energy provider will help save you money but also the Earth).<br />
<br />
3) Collect your cold shower water. In some homes, especially in the early morning, it can take some time for the shower water to be warm. Have a clean bucket / big pot near-by and collect all the cold water. You can use it for many items from watering your plants, cooking with it, flushing with it, brushing your teeth with it or giving it to your dog as drinking water.<br />
TIP: also take shorter showers and keep a little longer ones only for very special occasions.<br />
TIP2: finish off your shower with cold water as that will fire up your body to be more active during the day will giving you a better mood and immune system.<br />
<br />
4) Cook your favorite meals in batches and freeze them in smaller portions. That way there will not be any food waste and anyone can have their favorite meals in minutes.<br />
TIP: freeze the portions in upcycled glass jars. They stack nicely in the freezer, do not leech any microplastics to your meal and you can just remove the lid and place directly to the microwave and heat up/defrost and use as a container for meals out and about.<br />
<br />
5) Shop pre-owned. There are often items we long for but they are simply too expensive to splurge on (even if we could afford it we can simply not justify it). If you know any of your family members are longing for a product, look in the pre-owned market for it) make sure it is in a good condition so they are happy). This way you will have items you really dreamed about and you will only purchase items that have already been created in the past.<br />
TIP: make sure you care for your items well so they last ages and stay away from,,in fashion items,, and buy classic, quality, timeless pieces that suit your personality, frame and tone.<br />
<br />
6) Invest in high-quality reusable grooming and hygiene products (for example: a menstural cup, washable pads, reusable cotton rounds a glass file for women and electric shaver or steel razor for men).<br />
<br />
7) Grow and freeze your own herbs - start growing herbs (you can request seeds or seedlings from a friend to make it as cheap and eco-friendly as possible. It is very easy to grow them, anyone with a window can do it. Also, if you have a compost the soil is for free, or ask a friend or colleague with a compost for soil if you wish.<br />
TIP: do not overwater the herbs and do not water on top of the soil but place your herb pots in a tray and fill the tray with water. This way the herbs will thrive and grow better.<br />
TIP2: This is also true with your aloe vera which has so many skin and air purifying benefits<br />
and also just keeps on growing with very little effort and is always prepared to aid your skin during a break-out or burn.<br />
<br />
8) Air dry your clothes. If you are lucky and you have a garden, then the smell of your air-dried clothes will be heavenly. But also clothes dried indoors provide many benefits, you save from buying a dryer (or repurchasing in the future), you save a lot of energy, you clothes will last longer as air-drying is much more gentle on them and if you hang it nicely you also do not have to iron any of your clothes as they will dry nice and wrinkle-free (office shirts might be the only exception).<br />
<br />
9) Stop buying gifts for people. Often, we feel obligated to purchase gifts if it is the person's birthday, house warming party or a special occasion. Often these gifts will fill a nice first time-impression of happiness and gratitude which of course is very nice but will often not provide long term happiness.<br />

10) Visit your nearest library (or find the best one in your area/commute). Did you know that museums borrow out the most random yet practical things? From language courses to cooking trays, museum passes, fishing poles, children's costume clothes, power tools, musical instruments and of course books, magazines, and student's books. What are you waiting for? Sign up at your nearest library today!<br />
<br />
And at last: Make the whole journey fun. Engage all and make it more like a competition, to see who is the most frugal, eco-friendly and smart and praise a lot for every idea and change, small or big.<br />
Do not criticize if someone makes a wrong desition but talk to them about how it could be improved for the future. Also, if someone is not ready yet to think too eco-friendly try to motivate them in the topic they listen to. For example, highlight that they can save money, that they can actually afford the more expensive things in shopping pre-woned and so on. Set goals, challenges and make it fun!<br />

Growing up as a child my beloved mamma always used to tell me that she so misses, proper, bread and that the country we lived in at that time did not provide it. I am not sure until today if that was the case, but it is true that in the area we lived it was mainly soft, white bread which also contained sugar for a sweet taste. Delicious, yes, but not so healthy and also not so much like real bread, eighter.</div>

Luckily, this story has a happy ending and my mamma moved back to her country and is now enjoying her favorite and the proper, bread every day with no sugar added inside. :)<span class="Apple-converted-space"> </span></div>

I have already posted a recipe for the most delicious soft bread which is so easy to make and freezes so well which is a great bonus as now you can always have slices of homemade bread on hand.<span class="Apple-converted-space"> </span></div>

As this is a baking recipe and not cooking recipe, please follow all steps carefully in order to have the best outcome.<span class="Apple-converted-space"> </span></div>

500 ml of organic all-purpose flour +<span class="Apple-converted-space"> </span>for dusting as it gets sticky</div>

480 ml warm water (35 degrees celsius)</div>

1 teaspoon of sea salt </div>

1 sachet of active dry yeast<span class="Apple-converted-space"> </span></div>

1 teaspoon of organic olive oil<span class="Apple-converted-space"> </span></div>

Fill a bowl with the warm water and add the yeast.<span class="Apple-converted-space"> </span></div>

In a separate bowl. Add your flour and salt and combine it together. Make a small hole in the middle and pour in the water.</div>

Wet your main hand with water (to prevent sticking) and mix the dough by hand well but gently. Once the dough comes together (will hold together in one piece and not stick too much to the bowl sides), cover with a kitchen towel and let rest in a warmer place (you can use the oven on a low setting, too) for about 1 hour and 30 minutes.<span class="Apple-converted-space"> </span></div>

Now, the dough has just about doubled in size.<span class="Apple-converted-space"> </span></div>

Place it on your clean countertop or large cutting board and make sure you dust the place with flour, first. Dust on top of the dough, too.<span class="Apple-converted-space"> </span></div>

Shape the loaf with your hands. Fold the dough under itself several times to form a nice round shape. Pinch together the seams so they do not separate.<span class="Apple-converted-space"> </span></div>

Coat a bowl with olive oil and place the dough seam-side down. Cover with a kitchen towel and leave to rise for 1 hour in a warmer place (you can use the oven on a low setting, too).</div>

Now, preheat your oven for 230 degrees celsius. And leave it to heat up with a dutch oven / le Creuset / heavy cooking pot / cast iron pot or anything similar you have.<span class="Apple-converted-space"> </span></div>

After the dough has been rising for an hour, please the dough in your heated-up pot (be careful, very very hot) upside-down.<span class="Apple-converted-space"> </span></div>

Let it bake for 45 minutes and then remove the lid and leave it to bake for an additional 15 min (will give a wonderful colour and crust).</div>

It makes the softest bedding, the coziest socks, it feels extremely luxurious on the skin yet it is much better for the planet (pre-woned is however always better). make sure it is always grown sustainably as that is important no matter what you are buying. Also never buy more that you really need. If you already have a nice bedding set you do not need a bamboo one, yet :). </span></div>

The weekend is at full speed and there is nothing more perfect than sit down and snuggle up under a cosy blanket and watch some nice movie with your loved one (yes, I know I am an old fart, but hey!). Growing up in my country, cheese popcorn or cheese nachos was the obvious choice. I now live in a country where cheese popcorn is not a thing (well, it is actually nothing as it does not exist here, which turned out to be a great thing as now I can not have it and it also made me look for other options) so I created this recipe even before my cruelty-free journey.<span class="Apple-converted-space"> </span></div>

PRO TIP: Have you heard, that you can eat your popcorn with wooden chopsticks in order to eat more slowly and to keep your fingers clean?<span class="Apple-converted-space"> </span></div>

Put your pot on the stove and let it heat up on medium/high heat for about 1-2 minutes.<span class="Apple-converted-space"> </span></div>

Add 1 tablespoon of oil to the pot and your popcorn and cover with your lid. Shake your pot to coat all the kernels with the oil or stir with a wooden spatula.<span class="Apple-converted-space"> </span></div>

Leave on the heat and wait until the kernels start to pop. When the popcorn starts to pop leave on medium to medium-low heat.<span class="Apple-converted-space"> </span></div>

Meanwhile, in a bowl or pot melt your butter, add salt, Tumeric and pepper. Set aside. Have your nutritional yeast ready.</div>

When the popcorn is popped (you will see it has expanded and when you hear that it takes about 3 sec for an additional kernel to pop you know it is time to take it off the heat as it would start to burn the rest of your popcorn, trust me I have found out the burnt way).<span class="Apple-converted-space"> </span></div>

Now it is time to slowly add your butter mix. Try to spread it out evenly as otherwise, only a few popcorns would soak up all that delicious vegan butter. Shake all well. Add your nutritional yeast gradually as well but you do not have to be as careful as with the nutritional yeast.<span class="Apple-converted-space"> </span></div>

This is a plant-based version of one of my favourite dishes from the past. Pasta Vongole with clams. Since I now strive for a more plant-based life which is more ethical, cruelty-free and environmental I have created a version which fully curbs my cravings for my beloved dish as well as makes me really full and without the usual, carb coma.</div>

Ingredients:</div>

King oyster mushroom</div>
<div class="p1">
Vegan butter (organic naturli)</div>
<div class="p1">
Sea salt</div>
<div class="p1">
Shallots (or onions) and garlic</div>
<div class="p1">
White pepper</div>
<div class="p1">
Organic brown rice linguini pasta</div>
<div class="p1">
White wine</div>
<div class="p1">
Olive oil</div>
<div class="p1">
Parsley</div>

Start with setting your pot for the pasta to boil with salted water on high heat.<span class="Apple-converted-space"> </span></div>

Slice mushrooms (start with some large sizes for presentation) and then the rest into thin long pieces.<span class="Apple-converted-space"> </span></div>

Now, add your pasta to the water if it is boiling (set the timer accordingly to the instructions on the pack or to your own preference - I prefer a bit softer pasta personally as it feels more comforting)</div>

!!! Before you strain the pasta, remove a 1/2 cup of that salty water and set aside (very easy to forget).</div>

First pan the large pieces on a pan with a little vegan butter, salt and white pepper.</div>

Meanwhile, slice your shallots and garlic (garlic sliced very fine or made into a paste) and then stir fry them in the pan and add the small chopped mushroom pieces as well. Season them with salt and white pepper.</div>

Strain your pasta when ready and do not forget to set aside 1/2 cup of the pasta water.<span class="Apple-converted-space"> </span></div>

* If you wish your sauce to have more of a body and thickness you can add 1 teaspoon/person of flour into the with wine and stir well before adding it to the pan.<span class="Apple-converted-space"> </span></div>

When the mushrooms are nice and soft (King oyster mushrooms can feel a bit starchy if undercooked) add 1/4 of a cup of your pasta water and chilli (if you want) and let it simmer down and add white wine as well and a knob of butter (if you are on a diet you can skip the butter here).</div>

Chop up your parsley while your sauce is reducing.<span class="Apple-converted-space"> </span></div>

Taste your sauce and season with anything you feel like it is missing (based on your taste, I like it as it is but you can add: lemon, herbs, sugar, tomatoes, tomato passata, chickpeas, olive oil, strong stock, organic vegan stock cubes, - there are no rules in cooking, only in baking :) ).<span class="Apple-converted-space"> </span></div>

Now, add your pasta and stir. Let it sit for a little while so the pasta can absorb some of the taste. Add your parsley (leave some for garnish if you wish).<span class="Apple-converted-space"> </span></div>

Garnish with parsley and drizzle with a bit of olive oil for a heart-healthy fat. Decorate with your large mushroom pieces.<span class="Apple-converted-space"> </span></div>

Growing up in a safe and clean country which valued its nature above most of the things in life I have always been a firm hater of toxic and harsh cleaners. I however always stayed clear from vinegar as I can not stand the smell. It must be on of the worst smells I know (and I have experienced some stinky situations owning a dog, helping to raise my siblings and loved to play in mud and dirt as a child, well, love it even till today).</div>

This all-purpose cleaner does an amazing job on taps (leave them shinier than my previous eco-cleaners), mirrors, countertops, bathrooms, glass and much more.<span class="Apple-converted-space"> </span></div>

PLEASE NOTE: do not use on marble, wood and leather as this cleaner could damage these materials.</div>

After 2-6 weeks. Strain the vinegar from the peels and make a solution of 1:1 of your orange-infused vinegar and water. Put into an old and recycled spray bottle.<span class="Apple-converted-space"> </span></div>
